This recipe is for people who find themselves with extra apples on their hands, something that happens to many (lucky) people in autumn. I fit the bill after a co-worker brought in a gigantic box full of Cortland apples from her yard.
This recipe is a new one for me because, despite having two, I haven’t used a dutch oven before! Nor made this meal, of course. These are so comforting, and delicious. And you can really make it stretch, especially if you add beans.
Fall is here! Well, sort of – it’s 75 degrees today, rainy, and the leaves had barely begun to change before the wet dreariness started pulling them off their branches. Fall is nearly everyone’s favorite season, isn’t it? It’s the gentle reprieve from the endless humidity of summer, and the last moment of lightness before every curbside and crevice is packed with heavy snow. And it’s so short and sweet – it never overstays its welcome – which always makes a good thing better.
I encourage you to learn from my mistakes so, dear reader, if you have never cooked brussels sprouts and bacon together, here is my advice: don’t walk, RUN.
